I realise this flavour of cheesecake isn't everyone's cup of tea, but it is a good recipe and did set in shape. We did easily double the peppermint essence to our tastes though. 😄 We made the UK edition, using bourbon biscuits for the base and covered the top with crumbled mint aero bars in place of Aussie ingredients.
