I removed 50g of sugar, and to make up the remaining 115g, I used 85g brown sugar and the rest is granulated white sugar. Threw in a handful of shredded dried coconut, but wasn't enough to taste. Will put in more next time.
It's 6C right now in my home (Aussie winter) so no way I could warm thd butter to room temperature. I used the melt function on my microwave enough that it was soft. It was separating, so I stirred it, left it on the bench while I prepared other parts, and then used it. Worked, really well.
I do not have a big sweet tooth so this was fantastic for me. Shared it with colleagues in the office and they loved it. Used butter to grease the pan to make the "crust" crispy.
