Made this with a mix of frozen blueberries and frozen sour cherries. Was pretty easy - didn’t even roll the dough out, just pressed between my hands and flattened in more organic shapes. Used milk with some white vinegar to approximate buttermilk. Would double the fruit. Used half baking powder and half baking soda. Would add in some vanilla to the berries and some finely grated lemon zest into the dough. Used coconut sugar instead of brown because it’s what I had. Probably made it less sweet. Sprinkled white sugar on top for extra crispiness. Would be better with Demerara sugar. The topping is almost too fluffy for what I’m looking for. I want something with a bit more crust/crunch. Maybe I just want it to be a crisp rather than a cobbler. Buuut was truly delicious. Would absolutely make again. I might increase the corn flavor next time.
