This was great! I used regular wheat noodles instead of the sweet potatoes since I couldn’t find them. Boiled the noodles first and then pan fried them. In the future I might treat the noodles more like in the smitten kitchen recipe for the sheet pan dinner - they get a nicer texture there for lower effort.
I used normal brown mushrooms and no spinach just due to what was around. Way more scallions for the same reason.
Marinated the meat for an hour or so and it came out super juicy.
It could tolerate more heat.
Could maybe use bok choy instead of spinach in the future.
