I made a version with less fat I used 5:1 chicken to pork ratio, instead 1:1, so it was less fatty, but still retained some nice pork flavor. I used chicken breast, which is not ideal for this recipe. Nex time I will use chicken thighs only. As an extra I also used canned pineapple which is used in some other recipes. Overall very good dish, will add it into my rotation.
