Delicious! I ended up getting about 6 cups of broccoli out of 1 head so I used 3 cups of broth instead of 2. I probably could have done 4 cups of broth.
I switched the paprika for smoked paprika. I added a dash of cayenne pepper at the end and a dollop of sour cream. Spice amounts did need adjusted but I did add more broth and broccoli than was called for.
Next time I might try roasting the broccoli while the carrots cook in the broth. Then add the roasted broccoli into the soup. The crispy roasted broccoli would add a lot to the dish.
