This recipe got the seal of approval from my Czech boyfriend! In an attempt to get something closer to authentic, I emulated hruba mouka (czech coarse flour) with a mixture of semolina flour and plain flour in a 1:2 ratio. He loved it. Next time I make this, I'll probably make a double batch so that I can freeze some of it.
It took longer to rise than written in the recipe, I left it for 2 hours and even then feel I could have maybe allowed them to rise again after shaping. That's nothing unusual for me though, as I live in a cold climate so often have to give yeasted recipes plenty of time to proof.
My steamer set up was homemade and not super airtight, so I steamed it for a bit longer to compensate, probably about 35min.
I'd love to play with this recipe in the future and maybe try some different types of bread cubes or a sweet version.
