I didnt think the onions would be THAT good from just 20 mins, baked underneath the pastry crust... but they are.
Such an easy recipe, looking forward to experimenting with flavours! It was super tasty with a raspberry balsamic glaze i made (but basically turned into balsamic jelly i reduced it too much..)
Improvements for next time: more thyme, more ans thicker sliced onions, more balsamic glaze, and more salt. The plain pastry crust wasnt as nice as when there was onion beneath it, so i may attempt doing a full flat pastry instead of lots of mini ones to get ultimate onion/balsamic ratios.
