I didn’t have any bacon, but it was still really delicious. Because of making it for young (fussy) children, I finely grated the carrot, sliced the celery really thin and added finely grated zucchini. It meant the first step didn’t sauté well, because of the moisture, but it still cooked really well in the end. I thickened with xanthan gum, instead of cornflour to keep the carbs lower. The children haven’t sampled it yet, but I am keeping my fingers crossed they like it.
