Husband approved. I doubled the recipe and used bone-in thighs. I removed the skin and trimmed the fat. Left the bone-in for added flavor. Cooked for 5 hours and they were perfect. Was leary of using 2 chipotles so only used one. I'll use two next time. I think I'll try adding some cumin for added seasoning next time as the chicken was just a little bland. I used 3 oranges in the salsa because they were on the small side. I also segmented the oranges between the membranes, time consuming but worth it. I also did half cilantro and half Italian parsley as husband doesn't like a strong cilantro flavor. Will also try substituting green onions for the white onions as I think they might complement the orange better. Next time I'll make the salsa in the morning to keep the last minute prep for dinner to a minimum. Served with small garden salad.
