Delicious! Hubby said the best pumpkin soup he's ever had. Kids loved it too (shocked! 🤣) ... I was worried about the ingredient ratios but it's actually perfect. We cooked a double batch to freeze some. The chickpeas made it exceptional....plus leftover chickpeas for my daughter to take as a school snack. YUM. No salt, didn't need it, but next time I'm going to add more ginger and maybe some turmeric. The only thing we did different was spring onions as we already had some and didn't have any parsley, next time though I think coriander would be best. I had a slice of rye sourdough and it was a perfect match.
