This was a winner for the two of us who were home! My main suggestion would be to cut the potatoes smaller because quartering them left me with some potato pieces too big (for me) to eat comfortably. 1 inch pieces are probably good.
I would have preferred a thicker broth by the time of serving. I did notice that the broth had thickened quite a bit by the time we'd finished eating (with the slow cooker lid propped open a bit by the ladle). Next time, I'll try this for the last 15 minutes of cook time.
Not a true "dump and go" meal, but I bet I could use frozen potatoes (hash brown cubes) to cut down on prep work. This would also solve the issue of the potato pieces being too big.
I added a touch more garlic because the baby potatoes at our store come in 1.5 lb bags, and I put the whole bag in. I didn't increase anything else (though the chicken breasts I used seemed massive).
Also, this made my house smell amazing all afternoon. Strongly recommend.
