Trust the creator when they say to use only yellow tomatoes and bell peppers. I only got red ones, and it was... visually unpleasant to say the least. It looks like what you find behind the carnival tent at 1 am on a Saturday night.
That aside, it tastes a lot better! I oven roasted the tomatoes before adding them, because my corn wasn't really sweet at all.
I still recommend doing something about the texture if you have sensory issues, but overall a solid recipe!
