Totally amazing!! Creamy with a crispy base.
Made it as a gluten free version with ginger and a mandarin topping
Substitute 1 packet gluten free Nairn Ginger flavoured biscuits for Graham crackers.
Add 3-4 finely chopped lumps of crystallised ginger (blitzed) to cheese cake
After cooking in pressure cooker and before chilling used 1 tin of mandarins thickened with half a sachet of veggie gel (heated liquid as per veg gel instructions and added fruit ). Thickens quickly as assembling. Added couple more slices of ginger to top.
Rich. Small pieces but served 8.
