this was really, super tasty. used lite coconut milk. also used frozen mango chunks instead, and added it in after the chia to let them thaw in the jar overnight, which added a bit more liquid to the overall result. but i think adding more chia seeds or less of the milks could help even that ration out. still it was delicious and simple/easy treat, a great snack, and it's going into rotation. if you enjoy mango sticky rice, you may like this too
