This is a recipe that has potential. It could do with lightening up somehow, as it had a bit of a pound cake texture to it. I would be tempted to add nutmeg, ginger or more cinnamon to the loaf recipe also. The “filling” you need about double or triple what the recipe suggests. For this to look like the picture online you’d need a nice jammy layer in the middle and plenty to glaze the top with. That would have made a nice crispy sweet topping which would really have helped my loaf I think. I also added a teeny tiny smidgen of vanilla essence and salt to the filling.
This is okay. With a cup of tea it would prevent you from devouring a packet of biscuits on a sugar rampage. But I’d definitely make more filling and use some as a topping and think about how I could fluffy up the sponge a bit. Less almond flour more baking powder maybe.
