Not bad but room for improvement. It felt too thick and sticky.
- Next time I will use 1/4 less mashed potatoes and dilute it very much with the pasta water.
- I will use 3 times as much Pancetta. Because with this quantity you have to look for the meat and also the taste
- Use double the cheese to add extra flavor.
