This is my new go to. I made no substitutions I used the exact ingredients called for. I did reduce the dark soy sauce to 1 tbsp instead of 2. I might try it with 2 next time but really it was excellent with just the one. This is not a lightly flavored fried rice, but one that is full and rich with umami flavor. I did velvet and add pork. I also added peas and carrots.
