I used Field Roast Italian Garlic & Fennel Plant-Based Sausage, 12.95 oz. This worked very well. I increased tomatoes to about half a cup. I also used a full bunch of kale from the grocery, which seemed a bit much. I would probably increase the recipe by 50% if using a full bunch of kale.
