I made it with extra creamy oat milk. Did not use the cinnamon sticks because my pumpkin pie spice is cinnamon forward. Tasted it after recommended cooking time and added an additional 1 tablespoon of pumpkin and cooked for another 2 minutes.
Flavor is close to commercial PPS creamers, texture is a little grainy - the spices never dissolve completely. I had no problems with curdling by putting creamer in cup before coffee. Definitely needs shaking before each use.
A healthy if not perfect alternative to commercial PPS creamers.
