Sooo good! Probably increased the eggplant amount and would recommend doing so. Used regular breadcrumbs and admittedly they’re a bit sandy, so in the future maybe homemade breadcrumbs would be better, but honestly still amazing. I messed up a couple of things and it was still exceptional and fixable.
