I did not make this vegan. I was out of eggs and needed an egg free recipe. I used regular 2% milk and butter. I was also out of brown sugar so just doubled the white sugar. I doubled this recipe (It made 36 muffins for me) and used 1 whole bag of dark chocolate chips and added about 2/3 cup cocoa powder so they were banana chocolate chocolate chip. Aaanyway, they were amazing. And I think without my substitution and additions they still would have been delicious. The batter is thick and delicious and moist. Perfect muffins. I bet this recipe would work just as well subbing pumpkin for the banana.
