A new favourite in our house! Quick and easy, from chop to chew in about 30 mins. I added a teaspoon of turmeric for its amazing health benefits, and to give the soup a deeper shade of yellow. As we don't have 'half & half' here in New Zealand, I used 1.5 cups of regular milk and .5 cup of cream. This is less that the recommended ratio, but I think that you can safely reduce the cream in this dish as the cheese takes care of the richness of the dish. I also reduced the simmer time of the veg, I like a little crunch. Winner!!
