I'm sorry. I didn't mean to come across as critical. Please forgive me. I really do bake by smell. Though I don't claim to have a great smeller, I can tell when the oven is too hot by the smell of the metal. I can tell how many more minutes bread needs to bake by the smell, without opening the door. Sorry again.

Many ovens do not actually maintain the temperature they say. This is how you can troubleshoot it. Take a thermometer that is oven safe. Place it in the oven and turn it on as low as possible. With most modern ovens the lowest they will go is around 175 degrees Fahrenheit. After 1 hour check the temperature. Write it down, and write down what temperature you set the oven to. Then do the procedure again for the oven set to 200 degrees Fahrenheit. Then 250, 300, 350, 400. With the chart you have made you will then be able to adjust the temperature of the recipes you want to bake.
