Delicious and easy one pot soup. Great for weeknights
Added carrots and couscous
Used veggie broth instead of water, also added a bit of oregano and crushed red pepper. Pasta is not needed, the broth is SOOO good. Used coconut milk instead of coconut cream.
Second try used orzo; only 1/3 cup added turmeric, thyme in addition to the oregano and red pepper flakes, also added mushrooms.
