I used this to be our Step 2 in the Egg Challenge that my baby needs to do for his allergy. (We needed 2 cups of flour and 2 eggs baked for at least 30 minutes.) It's a really tasty muffin as is, and it has lots of suggestions for add-ins. I baked it for longer than suggested (30 minutes) so it was a bit dry. I used coconut sugar and it gave it a very nice taste.
