So good! I cut the recipe in half. I used 1 egg and separated the white and yolk and whipped the egg white, which I folded into the batter before cooking. I did 1/2 tsp pumpkin pie spice and 1 tsp cinnamon. I did 1/2 + 1/4 tsp vanilla. Let the batter rest for 15 min before cooking. Not overwhelmingly pumpkin spicey(which is a good thing in my opinion!) but can definitely tell it’s a pumpkin spice pancake! Would make again.
