Yesterday morning, I prepped for the Mini Chicken Pot Pies using up leftover Jerk chicken thighs Mike made earlier in the week. So half the work was done already- bonus!
Last night for supper, I worked with frozen phyllo pastry shells for the first time. I had to improvise because I forgot I no longer have ramekins or a regular muffin tin. I mentally prepared for a sheet pan disaster ๐คฆโโ๏ธ๐ญ but no. I couldn't believe my luck! These were the best mini chicken pot pies, ever. ๐๐คฉ
P.S. I also now have chicken pot pie innards to make more again or have like a stew for a quick lunch! Love this recipe! Also, I forgot to mention, I replaced the 2Cups of broth with water instead because I didn't want to take away the jerk seasoning flavour. I also substituted coconut flour for cornstarch to thicken.๐
