This was amazing. I used mini, mixed colour potatoes and have no idea how much. Just what looked good to me. I used an entire container of beef broth, so more than it called for, and I wish I had more to add because even for a stew there wasn't quite enough liquid in the end. I'll definitely make this again. Glad I actually had fresh Thyme on hand!
