The method was perfect although my 2 ½ pound roast was done a bit earlier but I expected that with a smaller roast. I also used dried thyme instead of the rosemary. Basically any dried herb you fancy with beef is fine. Sage would be really good. I pureed the onions in the beef drippings, added a bit more beef stock, thickened with a bit of flour and it made a very nice gravy. Perfect!!
