Truly a taste of autumn! Ended up having to cook the thighs with the lid on so they'd cook through faster. Made the full recipe but with only 4 thighs (for two people). Maybe a tiny bit less sugar next time (fuji apples were sweet, I guess). Made instant pot carrots to go with it which worked great. Really need soft bread to dip, or perhaps wild rice. Truly exceptional! Felt fancy too. Thyme really helped offset the sweetness.
Second time making this I used a large breast instead, pounded evenly. Worked perfect. Little less sugar as well to compensate for sweet Fuji apples. Paired well with sharp cheddar Mac (kinda like when you put cheese on apple pie) and Brussels sprouts.
