My "Feel Sorry For Me Fajitas" because I was having a bad day turned into "Feel Good Fajitas" instead, for Taco Tuesday last night!
( There's a whole backstory but I'll tell ya the gist is, I had to pivot from Mediterranean Chicken & turned it into Leftover pork chop Fajitas, using The Girl on Bloor's sheet pan fajita Chicken recipe with her homemade Fajita seasoning.)
