I think it would be a matter of personal taste. I don't bake with chocolate pieces, but I assume they would be harder almost more "crunchy". I like chocolate chips in baking because they are creaamy and sort of melty if still hot. I've had cookies with chocolate chunks, but I don't know if it would work as well with the softer texture of focaccia. But I admit to being predisposed to all things creamy.
