Originator here. These are notes for myself. Next time I'll do 1.5 #'s sausage. Might try hot sausage next time. I actually used 2 tsp of McCormick's Cajun Seasoning and 1 tsp of homemade no salt Cajun seasoning. I also added another 1/8 tsp more of cayenne. These modifications made for a little bite of spice. Could do more but definitely not less.
Not the of best picture, sorry. This is next days lunch. We were hungry and dug into the evening it is was made. Only real difference is this doesn't show crispy bacon as a topper.
