These were incredible. I only had unrefined coconut oil so they had a light coconut taste to them which was great, but excited to try with unrefined coconut oil next. I added a little bit of chopped macadamia nuts too which went really well with the almond flour texture. They were so soft and chewy, just the texture I was craving. So hard to find a cookie recipe that doesn't require refrigerating for 30 min, which is no fun when I crave cookies now! I also didn't have eggs so I used the flax egg substitute they recommeneded which worked perfectly. This was so quick and easy, it will probably become my go-to cookie recipe now!
