Fantastic recipe! I've tried others that involved baking in a loaf pan and never quite nailed the consistency. The extra fat from the bacon makes a big difference as well. Very traditional flavor profile with the cinnamon and coriander, so if you're expecting a more "westernized" flavor, the spices might need to be tweaked.
