This is the BEST chocolate cake recipe I have ever made - I've been making it for years and it has never failed me!! This weekend I also had fantastic luck making this vegan - doing oat milk buttermilk with 1c oat milk and 1 Tbsp lemon juice & vinegar (half and half roughly), and instead of 2 eggs I used 6 Tbsp of aquafaba that was whipped to firm peaks and folded it in just before baking. I also always substitute vegetable oil for coconut oil because it gives it a lovely sweetness!
And turns out, chocolate ganache works just as perfectly with regular oat milk as it does with cream!
Seriously - this recipe IS magic!!
