Turned out great. Instead of lemon extract I used lemon juice, and it seems to have worked just fine!
I had to lower the servings to 7 (Only had 2 eggs), and since I don't have a bread pan, I had to use an adjustable cake form (set to 8 inches).
Spent about ~40 minutes in the oven, and it came out beautifully.
Regarding the icing, this is the one area that I didn't quite like. For next time I think I would substitute it with powdered sugar.
The syrup was great however - and it is a must.
It tastes great while fresh, and even after its been in the fridge for a while, it stayed amazing!
