This was a huge hit. Certainly not the absolute healthiest but treat it like a healthier takeout. It’s full of veggies and protein and you can reduce the rice if you’d like. While you’re at it, if you prep more veggies and bits, you can have it for later in the week. J loved it more than in the restaurants. Def some prep work with the veggies, but once they’re cut up, it’s relatively easy.
