Did you add water to the pan for the peppers to cook in? To cook the peppers properly, you’ll want to place them in a deep pan, add water and tomato sauce, then simmer them on low heat on the stove for about 1 hour and 30 minutes, with a lid on. Hey! Thanks for your help! The problem wasn't really with overcooking. It was primarily the turkey meat I had an issue with. It seemed to be cooked, but the texture was so... pastey, and the fat floated to the top of the peppers, and there was nowhere for the fat to escape, so it just sat there and jiggled. The look and texture of the meat was very unappetizing.
And the turkey was lean, too!
