My mods so I remember (turned out great!)
Noodles: two packs barilla oven ready lasagna noodles (soaked in hot water for 5 min before using). 6 per layer filled a 9.5x15 pan. The noodles were flexible but not slippery/soggy when layering. I love thin fresh pasta in lasagna and this was a delightful substitute.
Sauce: Jar of Rao’s marinara and 1 jar Rao’s arribiata. Did not add tomato paste or Italian seasoning.
Meat: 6 Italian turkey sausage mix of spicy and sweet. Cooked with parsley and garlic only, then simmered in sauce for a couple hours with a teaspoon of brown sugar. The flavor profile of the finished sauce was not that far off from my grandmothers homemade!
Filling: added the frozen spinach thawed and drained. Put only about a cup of the mozzarella in the mix and layered the rest on top of it. Next time would use a little less mozzarella than the recipe called for.
Layered as specified, making sure all edges were sauced. Had some sauce leftover. Sprinkled some Parmesan with mozzarella on very top. Let the lasagna sit out covered for a couple hours before baking.
Baked at 350 for 20min covered then 400 for 15 min uncovered. broiler for 5 min. Rested for 20. Cut like a dream.
