Oh, yes! Feel free to replace the asparagus with 8 oz of a vegetable of your choice, and any kind of bacon will do. Columbus brand turkey bacon really takes this recipe from "really good" to "fabulous😋🥰😉🤩"! Also check out the ranch mix recipe in the "Make it from scratch" group. The flavor takes another jump forward!

Would it be just as nice without onion?

@Selina Castle I never use onions. I am allergic to them. I use leeks or scallions, also known as "green onions". Some scallions get a small bulb. Both are very mild and sweet. If you don't have any you could leave it out, but it won't be the same.

I think I may try it with leeks, if I can get some.

Oh, yes! They are far and away my favorite. Generally your local grocery store produce department will get it in for you, if you ask. Otherwise a local CSA or co-op might have some already. I have been a produce broker for a long time so I know they are available year round. If you are interested in dehydrating, now is the time leeks are easiest to get and the least expensive. So if you can, get a case and dry it for later use. Expect to pay $25 to $35 for a case of good quality product that will provide you a year or so of dried leeks. Other times of the year they can be quite expensive, and lesser quality.
