use what you've got
Substitute 2 (3- to 4-ounce) boneless, skinless thighs for the breast and cook chicken to 175 degrees, increasing the cooking time as needed.
spice it up
Sprinkle the chicken with your favorite spice blend (see page 72) along with the salt and pepper. If using a store-bought spice blend that contains salt, omit the salt in the recipe.
get saucy
Drizzle with Tahini Sauce, Chermoula Sauce, or any of the sauces from pages 68-69.
