Absolutely delicious, 10/10 will be making again. My toddler ate 2 bowls and my big kids weren't super enthused but they did eat it. I made the following adjustments:
- substituted sweet potato for the carrots
- sliced a pound of chicken breast and sauted it in the oil and removed then followed step 1
- used chicken broth instead of veggie
- my "seasonal veggies" were canned green beans, half a zucchini, and one large yellow potato (about 3 cups total)
- used a little extra garlic and substituted Italian seasoning for the oregano and thyme
- I used kale and fresh grated parmesan
