It was fresh, although a bit too tomatoe-y for me. It kind of overpowered the spices. I would add less tomato paste next time or may skip it all together.
I ca not stand coconut anything, so I substituted for heavy whipping cream 1:1. I don't know how much of a. Difference this really made, but it didn't ruin it!
Im using this as a vegetarian meal prep recipe, I'm cutting down on meat because it's expensive!
Since it's just for me, I portioned this into 4 separate containers, I think this could honestly be 8 servings and pair with a sandwich or salad.
I froze two of the 4 for next week!
