This was my first attempt at making waffles, so I don't have the temperature controls figured out yet. It was easy and it turned out fine, with a light and fluffy crumb, but I would have liked a little more texture on the outside. That's probably my fault, as I'm new at making waffles, but I may try adding an extra tablespoon of butter to the mix. Edit: made it again a week later with the extra tablespoon of butter and an extra egg. Not sure the butter did anything, but loved the texture that egg added. I had the waffle iron on max but it was still not as crisp as I would like. I'm pretty sure it isn't the recipe's fault. The proportions are similar to a lot of other recipes, so almost certainly user error. Maybe I should simply toast them on a sheet pan in the oven when they come out of the waffle iron. My particular waffle iron may not go hot enough to produce a waffle with crispy edges. In any case, they are super tasty!
