This was just perfect for a cold, snowy evening! I opted to make it more like a stew: coated the stew meat with flour before browning it, only used one can of tomatoes, and then cooked it in the oven at 350 for about 2.5 hours. The broth was silky and delicious, the beef was tender, and the different root veggie flavors played well together. I'll definitely make this again!
