If you need an emulsifer try applesauce. Its actually a common egg substitute.

After so many fails making crepes, I know you have to add oil and something that binds ingredients together. I find flax meal usually helps it stick together. This receipe does miss those main ingredients. I tried doing this many years back and yes, it doesn't stick and doesn't cook well.
