New thing to note on this app. Instructions no longer exist, but I didn't find out till after I bought the ingredients. I looked up another few recipes and here is what I did and it came out delicious.
Crushed and loosely chopped the garlic.
Chopped all veggies except tomatoes into small squares. (why is there no eggplant in this recipe?)
Threw it all, including tomatoes into a bowl and generously tossed with evoo, s&p.
Laid it all out on a baking sheet, drizzled with balsamic vinegar and cooked in a 400 degree oven for about 40 min., turning when I remembered and deciding it was done when all tomatoes popped and everything was nicely roasted.
When done, I immediately dumped everything into the previously used oily bowl.
Added more s&p to taste, added the chopped Parsley and Basil and tossed.
Done. Super easy and really good!
