After draining the black beans I season them with garlic, onion powder, good salsa (heat level to your tastes), lime or lemon juice, sweet smoked paprika and a bit of salt. I have used both spinach and kale and Iike either one. I just microwave a large handful of seasoned greens for about 30 seconds (a bit of cumin, more garlic and a few drops of Worcestershire). I frequently add a layer of cooked sweet peppers with onions and, if I have them on hand, some cooked crimini or portobello mushrooms. Finally, I top it with 1 ounce of crumbled feta cheese or 1 ounce of chevre (I prefer the chevre). I heat the entire thing in the microwave for about a minute until heated through and the cheese is melted. The final step is yogurt/tahini dressing. I just combine equal parts Greek Yogurt with Tahini (just sesame seeds) and more garlic! I like the tahini for this far better than hummus. If I have avocado in the fridge, I might add a bit of that. I have made this for friends and family and everyone absolutely loves it! Curry powder would be lovely to add to one of the layers (probably the spinach). I have also given it an Asian cuisine twist by using different seasonings. The recipe is infinitely variable with wonderful taste and textures.
